Eric’s Big Bad John’s Tropical Chicken
Take juice of one lemon and one orange
1 oz pineapple juice
2 TBS Big Bad John’s
Marinade chicken 2 – 8 hours, grill and enjoy
Beans, Beans, Beans
Just add to: pintos, black, brown, black eyed peas, or the legume of your choice and cook as usual
Appetizer
Mix into sour cream for a tasty Southwestern dip
Grilling Steaks, Pork & Chicken
Cake on meat and marinade from 2 hours – 2 days. Grill 3 inches from the flame at 45 degrees angle to achieve the grill lines. Grill at 500 degrees for 3 minutes, rotate 90 degrees, grill 3 minutes and flip, grill another 3 minutes and rotate 90 degrees grill for 3 minutes and remove..
Fish
Same as above, except reduce grill time by 4 – 6 minutes
BBQ Sauce
Put 1 – 2 TBS of Big Bad John’s in to bottom of a coffee cup, squirt in favorite generic sauce (we like KC Master Piece) to half way and mix . While stirring infuse a long slow squirt of honey, until thick. Add 2 TBS of orange juice and stir in. Brush on your Big Bad John’s rubbed meat just before removing. (Please be sure you are sitting down, when you have your first bite)
Sandwich Spread
Mix 1 part BBQ sauce (recipe above) with 2 parts Mayonnaise or Miracle Whip. Spread on your favorite sandwich
Salad Dressing
Shake 1 TBS of Big Bad John’s into 1 part Balsamic Vinegar and 4 parts Olive Oil
Fajitas
Marinade steak strips and or chicken strips, green peppers, onions with Big Bad John’s from 2 hours – 2 days. Fry quickly in hot skillet.
